Engineering as a whole isn't going to be easy however pursuing a Computer Engineering degree can open much more pathways with respect to your future career; you can think of it as a culmination of electrical engineering + and computer science but if you want there's the option of going into the Software Specialization if you want to focus a bit more on the development/management of software.
CO-OP is completely optional for Computer Engineering students but if you want to participate in the official program you'll have to finish your 3rd year of your studies in order to be officially considered to be a part of the Cooperative Internship Program (CIP) but you can choose to pursue CO-OPs on your own without the help of the school, other than that I highly suggest that you work on side projects as well as your interviewing skills particularly for technical portions of some interviews.
